Pan seared salmon with citrus vinegar glaze (a.k.a Christi's salmon)

I hadn’t made this in ages, but it is another one of my absolute favorite recipes.  This time I made it with wild caught salmon, because it was on sale, but I think it tastes better (and is a lot more affordable) with farm-raised salmon.  I nicknamed it Christi's salmon, because my friend, Christi, and I wanted to cook something together, and she found this recipe for us to cook, so since then, I've always called it by this nickname.

Breakfast Casserole

This is excellent!  I love to make it for breakfast when we have friends or family staying the night with us.  My sister-in-law asked for the recipe after trying it, and she and her husband made it taste even better by adding about a teaspoon of garlic powder and ¼ teaspoon onion powder to the egg mixture.

This recipe came from a church cookbook and was submitted by Tammy Pratt.

Recipe:
6 slices bread, crumbled
1 pkg. sausage, browned (I use Jimmy Dean sausage - sage flavored one)
6 eggs, slightly beaten
1 cup milk
1 tsp. dry mustard
Salt and pepper
1 cup Velveeta or Cheddar cheese, shredded (I use Cheddar)

Crumble bread on bottom of 9x13 inch baking dish.  Brown and drain sausage.  Put it over the bread.  Sprinkle cheese over top.  Pour mixture of eggs, milk, mustard, and salt and pepper over top.  Refrigerate overnight.  Bake 45 minutes to 1 hours at 350 F.

Chicken and Cheese Tostadas

Another recipe from 100 days of real food.  Like the meatballs, this lacked sufficient flavor for me and my husband, but I have some better chicken tostada recipes I’ve made in the past that I need to dig up, make, and post on here.

Skirt Steak and Bok Choy Stir Fry

This is one of my absolute favorite recipes.  I highly recommend it!

Homemade Whole-Wheat Breadcrumbs

Homemade Whole-Wheat Breadcrumbs

I never knew that breadcrumbs were so simple to make until I found this recipe.  It’s a great way for me to use up the rest of the loaf of bread I can never finish.  I used Nature’s Harvest 100% whole wheat sandwich bread, which is nice, because I can’t find pre-made whole wheat breadcrumbs at the grocery store I go to.  I keep forgetting to take a picture of the finished breadcrumbs, but you all know what breadcrumbs look like.

Whole-Wheat Spaghetti and Meatballs

Whole-Wheat Spaghetti and Meatballs

This is a recipe from the 100 days of real food website.  The meatballs weren’t bad, but I didn’t think they were very flavorful either, so I wouldn’t make them again.  But, at least they were healthy and unprocessed.
