Baked carrots

Nico loves to eat these, too.  I take baby carrots, slice them, and then mix them with olive oil and a bit of salt.  Then, I spread them out in an even layer in a Pyrex dish and bake them at 400 degrees for around 40 minutes.  At about 20 minutes into the baking, I stir the carrots around to make sure they are covered with plenty of olive oil.  Enjoy!
